Sterilization refers to the complete annihilation of microorganisms and bacteria. It is used primarily on food processing equipment, as well as on medical or microbiology equipment. Hot-air sterilization is used on objects made from glass, metal or porcelain, and takes at least 30 minutes at a temperature of 180°C (356°F).
For the purpose of preserving it, food is sterilized at temperatures above 100°C (212°F). However, it often loses its nutritional value and flavor during this process.
Pasteurization is mainly used on food with a view to increasing its shelf life. It takes place at temperatures below 100°C and is used to kill microorganisms. Afterwards, the food is not completely germ-free and must usually be kept refrigerated.
In both cases, hot air is very good at achieving the required temperatures for the relevant period of time.
